Harrar is Ethiopia's most historic coffee origin, with a trading heritage that stretches back centuries. Located in the eastern highlands of the Hararghe Zone, far from the southern origins that dominate modern specialty, Harrar produces coffees of entirely different character — wild, fruity, and wine-like — shaped by the region's unique climate, altitude, and exclusively natural processing tradition.
The Hararghe highlands receive less rainfall than southern Ethiopia, resulting in a drier microclimate that naturally lends itself to sun-drying. Coffee cherries are dried whole on raised beds, allowing extended contact between the fruit and the bean. This traditional method produces the intense blueberry, dark cherry, and wine-like flavours that have made Harrar famous among espresso blenders and adventurous roasters worldwide.
Harrar's heirloom varieties — distinct from those found in Guji, Yirgacheffe, and Sidama — contribute additional genetic complexity. The coffees tend toward heavier body, lower acidity, and more exotic flavour notes compared to their southern counterparts. For roasters seeking something genuinely different within the Ethiopian portfolio, Harrar offers an unmistakable point of differentiation.
Production volumes are smaller than southern origins, and Harrar lots tend to sell out quickly each season. The best lots come from the Babile, Gursum, and Kombolcha areas, where altitude and terroir conditions are optimal. We recommend early enquiry to secure your preferred Harrar allocation.
